EASY GLUTEN-FREE PUMPKIN CAKE

Pumpkins are an autumn favorite for many people! But if you’re one of those that wait all year-round for pumpkin season like me, you’ll be glad to know that pumpkin desserts can spill into winter as well! I don’t know about you, but I’ve stocked up on cans of pumpkin puree for when the stores stop carrying them.

They were so kind as to send me their Namaste Foods Spice Cake Mix to try. Immediately, the spices in the mix (cinnamon, nutmeg, and cloves) jumped out at me and begged to be combined with pumpkin. Bonus is that it’s also gluten-free so that my entire extended family can also indulge with us!

SPICE CAKE MIX INGREDIENTS: Cane sugar, sweet brown rice flour, brown sugar, tapioca starch, arrowroot powder, rice syrup solids (rice syrup solids, rice protein, tocopherols), citrus fiber, baking soda, salt, cream of tartar, cinnamon, nutmeg and cloves.

HOW TO MAKE A GLUTEN FREE PUMPKIN CAKE

This cake mix box includes enough mix to make two 9 inch round cakes. This recipe will be for one round cake, about 1.5 inches high. If you’re in need of a double layer cake, feel free to double the recipe and use the entire box.

The instructions: In a mixing bowl, add 2 1/2 cups cake mix (1/2 the package), 2 eggs, 1/3 cup oil, and 1 can of pumpkin puree (15 oz). I used avocado oil. Feel free to use any safe oil for you such as coconut oil, vegetable oil, olive oil, etc.

The mix includes spices already, but if you like EXTRA spice, you can add a dash of pumpkin pie spice to amp it up even more!

Stir gently until just combined. Do not over stir.

Pour into a greased 9″ round or 8″ square pan lined with a parchment paper in the bottom.

Bake at 350F for 30-40 minutes or until a toothpick inserted comes out clean.

CAN YOU SMELL THE PUMPKIN?

The cinnamon, nutmeg and cloves in the mix complement the pumpkin so well that you don’t even need to add pumpkin pie spice. It can’t get any simpler.

So easy! Now just wait till it cools down so you can frost it!

Gluten-free Pumpkin Cake

Ingredients

  • Cup Namaste gluten-free spice cake mix 1/2 box
  • 2 eggs
  • Cup oil
  • 1 can pumpkin puree 15 oz can

Instructions

  1. Heat oven to 350F.

  2. Combine all ingredients.

  3. Pour into a greased 9 inch round cake pan or 8 inch square pan.

  4. Bake at 350F for 30-40 minutes. Cake is done when toothpick inserted in center comes out clean.

When the kids are not around to demand frosting, I like to keep my cakes simple. This gluten-free pumpkin cake is delicious plain with a steaming hot cup of matcha latte. I bet it would be the perfect afternoon snack with a cup of tea as well. Or how about the next morning with a cup of coffee?

    I’ve made this recipe several times with rave reviews! Is it possible to double the recipe (using a full box of Namaste spice cake mix) and bake in a 9×13 pan? How long would it need to bake? Thank you for this lovely recipe!
