Lemon Blueberry Muffins

Ingredients

  • 2 Cups all-purpose flour
  • 1/2 Cup brown sugar
  • 2 teaspoons baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 Cup oil (avocado oil, melted coconut oil, or any oil of choice)
  • 1 Cup applesauce
  • 1/3 Cup lemon juice
  • 2 teaspoons vanilla extract
  • 1/2 Cup blueberries

Instructions

  1. Preheat oven to 350F.

  2. Line a 12-cup muffin pan with cupcake liners.

  3. Mix all ingredients except the blueberries in a bowl until smooth.

  4. Fold in the blueberries.

  5. Spoon batter into the liners. Fill each liner 2/3 full.

  6. Bake 18-20 minutes or until a toothpick inserted in the center comes out clean.
