Prepare the tofu with a tofu press or use the DIY method to extract the soaking water.
Make the marinade by mixing all ingredients except for the tofu in a shallow dish.
Cut the pressed tofu into 1/2 inch cubes.
Place cubed tofu into marinade. Stir gently to coat and make sure all pieces are sitting in the marinade.
Place in fridge for 2 hours or more. Overnight will give the best flavor.
Remove from fridge and enjoy!
Optionally add spices like dill or oregano for even more of a flavor punch.
You can adjust the salt to your preference.
