Basil Cornbread

Dairy-free, Nut-free. Cornbread with a simple twist. Basil and extra virgin olive oil turn this into an Italian delight.

  • Cup all purpose flour
  • Cup whole wheat flour
  • 1 Cup corn meal
  • Cup sugar
  • 2 Tablespoons baking powder
  • ¾ teaspoon salt
  • 1 Tablespoon dried basil
  • ¼ Cup extra virgin olive oil
  • 2 eggs
  • Cup milk alternative (soy, rice, hemp, etc)


  1. Mix all ingredients together.

  2. Let sit for 5 minutes so corn meal can soak.

  3. Pour into parchment paper lined 8x8 inch pan.

  4. Bake for 25 minutes at 350F or until a toothpick inserted in center comes out clean.

Recipe Notes

You can add in some corn (fresh, thawed, or canned) to the batter for additional texture.
