WHAT IS WATER CAKE?
Water cake is a basic cake made easily with only 6 pantry staples. Water, oil, vanilla extract, flour, baking powder, sugar, and optionally cocoa powder.
This water cake recipe is perfect for when

- you don’t have many ingredients on hand.
Water cake originated in Italy where they eat a slice for breakfast.
DAIRY-FREE ALLERGY FRIENDLY WATER CAKE
Chocolate water cake only contains one of the Top 9 Allergens, wheat. This dessert cake is dairy-free, egg-free, peanut-free, and nut-free.
This water cake recipe is very adaptable and can accommodate food allergies.
If you don’t like chocolate flavor, feel free to leave out the cocoa powder. No replacements necessary.
For a gluten-free water cake, simply substitute the flour with your favorite gluten-free flour. This would be a 1:1 flour replacement.

WHAT IS WATER CAKE MADE OF?
Water, oil, vanilla extract, flour, baking powder, sugar, and optionally cocoa powder.
HOW TO MAKE WATER CAKE
Make sure to sift the flour as this is what makes the cake light and airy.
In one bowl, whisk together the dry ingredients: all-purpose flour, baking powder, cocoa powder, and sugar.
Then add the wet ingredients to the same bowl: water, oil, and vanilla extract. Whisk until combined.
You can use any kind of safe oil, such as melted coconut oil, olive oil, avocado oil, vegetable oil, etc.
Bake. Decorate. Serve. Eat.
DECORATE WATER CAKE NO EGGS NO MILK
We like to keep decorating fresh and light with this cake. A schmear of whipped cream topped with strawberries and blueberries is absolutely delicious.
Or how about a simple dusting of powdered sugar? This makes a nice finishing touch for the cake.
While some may like their cake to be simple and light, some others might prefer a frosted finished cake. Feel free to either decorate the entire cake or each slice individually.
CAKE DECORATING IDEAS FOR KIDS
Most kids love the frosting route and enjoying do this part on their own!
Original and Double Stuf varieties of Oreos are made on peanut and tree-nut free lines. Oreos make great toppings!
We like Pillsbury Frosting, which is free of nuts, dairy, and eggs.
Cherrybrook Kitchen has a chocolate frosting mix that is from a peanut and nut free facility. Dedicated equipment free of dairy, egg, and gluten. They also carry a vanilla frosting mix.
Miss Jones Baking frosting is made in tree nut and peanut-free facilities (with the exception of coconut oil). It comes in a variety of flavors.
The Festival brand of sprinkles are from nut-free lines.
HOW TO STORE THE CAKE
Keep the cake in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
NUT-FREE FLOUR
1. If wheat agrees with you, I recommend King Arthur all-purpose flour packaged in a paper bag, as they are milled in dedicated wheat-only facilities. If you are allergic, double check on King Arthur’s website as manufacturing practices may change.
2. For a gluten-free option, use a gluten-free blend such as Namaste Perfect Flour Blend.

Instructions

Preheat oven to 350F.

Oil the interior sides and bottom of an 8 inch round cake pan. Line the bottom of with parchment paper.

Sift the flour, baking powder, and cocoa powder into a mixing bowl.

Add sugar into the mixing bowl. Whisk until combined.

Add water, oil, and vanilla extract into the bowl. Whisk until combined.

Pour batter into pan. Bake for 30 minutes until an inserted toothpick comes out clean. Let cool.

If the batter is too thick, you can add a little water until it feels right.

WATER CAKE VARIATIONS
- Add chocolate chips.
- Leave out the cocoa powder.
- Add blueberries.
- Add lemon zest.
- Add orange zest.
- Add cinnamon or cardamom.
- Replace the water with orange juice.
- Slice the cake in half horizontally and a layer of jam in between.
- Add in 2 Tablespoons of instant coffee powder.
- Use melted butter instead of oil.
