Life is busy, so quick and easy muffins are always a welcome breakfast treat or snack in our house! This allergy friendly Classic Muffin Mix by Enjoy Life did the trick. We added a smashed banana for extra flavor. I’m sure that other additions like blueberries or chocolate chips would be tasty as well.
The muffins turned out fluffy compared to other gluten free mixes, but definitely doesn’t compare to the airiness of muffins made with all purpose white flour. I don’t think that would be a fair comparison anyways. It does have an earthy flavor from the buckwheat. I’m sure the banana not only added taste, but also helped the texture as well.
The mix only required oil and water, so it was super easy since we always have those on hand. I used avocado oil, but I’m sure any oil that is safe for you will work. You can try vegetable oil, canola oil, olive oil, coconut oil, or any others.
For a sweet crunch topping, a sprinkle of raw sugar on top before baking would be a nice addition.
These muffins freeze well. Just thaw at room temperature or in the microwave, then pop it in the toaster oven to make the top toasty! Perfect for a rainy or lazy day! I know that we’ll be keeping some handy for an easy breakfast or after school snack!

Classic Muffin Mix with Ancient Grains with added Banana
This Muffin Mix by Enjoy Life is tasty and easy to make. It is gluten-free, nut-free, dairy-free, egg-free, and soy-free. We added a smashed banana for extra flavor. Makes 11 muffins.
- 1 Box Enjoy Life Classic Muffin Mix
- 1/4 Cup oil
- 1 Cup water
- 2 teaspoon water
- 1 banana smashed
Preheat oven to 350F.
Combine muffin mix with oil and water.
Stir in smashed banana.
Line the muffin tin with paper liners and fill 2/3 full with batter.
Bake for 15-25 minutes until done. Check doneness with a toothpick and add 5 minutes until the toothpick comes out clean.
Ingredients: Flour blend (teff, white rice, buckwheat, millet, quinoa), dried cane sugar, rice starch, tapioca starch, algal protein, brown rice protein, sprouted brown rice protein, natural vanilla flavor, konjac, leavening (baking soda, cream of tartar, monocalcium phosphate), salt, probiotic (organic inulin (blue agave plant), bacillus coagulans GBI-30-6086).
