Which Flour to Use?
If wheat agrees with you, I recommend King Arthur all-purpose flour packaged in a paper bag, as they are milled in dedicated wheat-only facilities. If you are allergic, double check on King Arthur’s website as manufacturing practices may change.

Dairy-free Pancake Mix and Waffle Mix in a bag

Pancake Mix and Waffle Mix (Dairy-free)
A super simple recipe for a universal dairy-free mix that can be used for pancakes or waffles.
Ingredients
- 3 Cups all-purpose flour
- 3 Cups whole wheat flour
- ¼ Cup sugar
- 2 Tablespoons baking powder
- 1 Tablespoon baking soda
- 2 teaspoons salt
Instructions

Combine all ingredients into a container or gallon sized Ziploc bag.
Recipe Notes
- Store in refrigerator for maximum freshness.
- Instead of 3 Cups of each flour, you can use all 6 Cups of wheat flour or all-purpose flour.
To make pancakes (serves 4)
1. Simply mix together until smooth:
- 1 Cup pancake and waffle mix
- 1 Cup orange juice or milk alternative (soy, rice, hemp, etc.)
- 1 Tablespoon oil (melted coconut, avocado, olive oil, vegetable oil, etc.)
- 1 egg
2. Heat a lightly oiled pan or griddle over medium heat. Scoop 1/4 cup batter for each pancake into pan. Cook until starting to bubble. Flip pancake and cook until golden.
To make waffles (serves 4)
Follow the directions for pancakes and add one additional Tablespoon of oil, for a total of 2 Tablespoons oil.

- 1 Cup orange juice or milk alternative (soy, rice, hemp, etc.)
- 2 Tablespoons oil (melted coconut, avocado, olive oil, vegetable oil, etc.)
- 1 egg
2. Follow the directions for your waffle iron.
Healthy Alternative
For a healthy alternative, eliminate the sugar from the mix. Then, when making the batter, add fresh fruit or maple syrup for sweetness. You could also use 6 cups of whole wheat flour in the mix instead of 3 cups of all-purpose and 3 cups of whole wheat.
Add-ins
There are so many things you can add to your batter to liven up your pancakes! Try chocolate chips, cocoa powder, cinnamon, cardamom, blueberries, bananas, vanilla extract, matcha green tea powder, flaxseed meal, hemp seed, shredded coconut, etc.
